THE THREE SIZE - VARIED PROCESS TRILOGY
BRAZIL - Peaberry (small) pulped natural process.
Small but packed full of flavour. Peaberries represent only around 5% of the crop. The cherries are allowed to dry naturally on the bushes before pulping. Mild, sweet and round bodied.
EL SALVADOR - El Capulin (medium) natural process.
Fruit and nutrients from the skin of the bean go through the drying process of a natural coffee. Picked ripe and sun dried on raised beds. This variety has sweet notes of strawberry, lavish chocolate and smooth caramel.
NICARAGUA - Maragogype Superior (large) wet process.
From the beautiful and modern production facility at 'Las Nubes' situated near the town of Maltagalpa which we visited in March this year. A well balanced coffee with a rich body, gentle acidity, notes of chocolate, lemon and lime.
