After picking cleaning and pulping the beans, a special yeast is added to the mix and then covered to allow for a 36 hour anaerobic fermentation. The resulting flavour is quite unique;
smooth & full bodied with flavours of pineapple, strawberry,
lavender, caramel and lime.

Hermosa - Honey Processed
Honey process is a hybrid between natural (dry) and washed (wet) during which 70% of the mucilage, or outer coating, remains on the bean whilst drying and before milling. The resulting flavour is less acidic than one would expect from a washed coffee, while not as fruity as that from a natural processed one.
Sweet and juicy with notes of caramel, red apple and cherry.
