Characteristics: From the award winning 'Daterra' estate, this Brazilian coffee has a sweet aroma with notes of tea rose, honey, almond and apricot. Balanced body and acidity with an aromatic finish.
Further Information: The purpose of the 'semi-washed' process is to separate ripe fruits and highlight the sweetness of the coffee.
Initially, the outer skin is removed from the cherries using machines, and the remaining coffee beans – still with their mucilage attached – are then stored. Following this period, the mucilage is then washed off with water, before the beans are subsequently dried. Processing beans in this way is said to reduce the acidity of the final coffee, rendering it more full-bodied and potentially preferable for espresso.
